SCD Recipe: Slow Cooker Pork Tenderloin Lettuce Wraps

I don’t eat a lot of pork, but we happened to have some pork tenderloin. I like it best slow cooked so it is nice and tender. I have done it on the stove top, but you can’t really beat doing it in the slow cooker.

Ingredients:


 One or two pork tenderloins
2 – 3 tbsp olive oil
1 – 2 tbsp dried spices (basil, cilantro, sage, parley, garlic – whatever you like)
1 tsp salt
1/2 tsp pepper
1 cup water
Romaine or Butter lettuce leaves

Preparation:

  1. Mix all spices, salt and pepper in a small bowl
  2. Place tenderloin(s) on plate
  3. Rub olive oil over the tenderloin
  4. Spread spices evenly over the tenderloin
  5. Pour one cup of water into the slow cooker
  6. Place meat in slow cooker
  7. Cook on high for two hours, then reduce to low and cook another 2 – 4 hours
  8. Allow meat to rest a few minutes before serving 
  9.  Break meat apart and place in lettuce leaves
  10. Wrap and eat
