Beat eggs, lemon juice, and honey at high speed for 1 - 2 minutes
Chop butter into six pieces - 1 piece for each tablespoon
Place egg mixture into a medium saucepan
Heat over medium-low heat, stirring constantly, for 8 - 10 minutes until mixture thickens and coats the back of the spoon
Remove from heat
Stir in butter pieces one at a time until butter is completely melted and mixture is combined
Pour mixture into a large bowl, or several small bowls to make individual servings
Allow to cool to room temperature
Place in refrigerator and chill for at least an hour before serving
