Lemon Curd in jar

SCD Lemon Curd

Ingredients

  • 3 large eggs (increase to 4 if only using yolks)
  • 1/2 cup lemon juice
  • 1/3 cup honey
  • 6 tbsp butter (or coconut oil for Paleo)

Instructions

  1. Beat eggs, lemon juice, and honey at high speed for 1 - 2 minutes

  2. Chop butter into six pieces - 1 piece for each tablespoon

  3. Place egg mixture into a medium saucepan

  4. Heat over medium-low heat, stirring constantly, for 8 - 10 minutes until mixture thickens and coats the back of the spoon

  5. Remove from heat

  6. Stir in butter pieces one at a time until butter is completely melted and mixture is combined

  7. Pour mixture into a large bowl, or several small bowls to make individual servings

  8. Allow to cool to room temperature

  9. Place in refrigerator and chill for at least an hour before serving

  10. Store in refrigerator
