SCD Tip: Easy One Ingredient Pineapple Ice – No Sugar

This recipe is so good and so simple, it’s bound to become a new favorite. This Specific Carbohydate Diet (SCD) friendly dessert only has one ingredient – pineapple!

You may have made SCD soft serve with frozen banana (and if you haven’t, you totally should), but have you tried just pineapple? It’s so good! Not only is it delicious, but it’s surprisingly creamy.


I discovered this almost by accident. I had some cut up pineapple that had been sitting in the fridge a couple of days and I wanted to make sure it didn’t go to waste, so I threw the chunks in a freezer bag and put the juice it had been sitting in (formed while the pineapple was ripening) back in the fridge. All perfect for a smoothie in the morning, I figured.

What to do with extra ripe pineapple?

A few hours later, I was in mood for something cool and refreshing right then. I checked my pineapple. Not quite frozen all the way, but definitely icy. It would do.

I decided to crush it up first because I was using by single-serve blender cup and didn’t have enough room for anything else. So I put in my mostly frozen pineapple chunks and the juice I had saved earlier and blended.

The Perfect SCD Frozen Treat

I soon realized it was perfect without adding anything else. It was so good! Smooth, creamy, sweet – everything you want in a frozen treat.

The recipe is for a single serving, but you can of course make as much as you want. If you don’t have any reserved pineapple juice, just add a little water to get it to blend.

How to Make One Ingredient Pineapple Ice

Quick, easy, refreshing, delicious, creamy Pineapple Ice

Freezing Time 3 hours
Total Time 3 hours 5 minutes
Servings 1 serving

Ingredients

  • 2 cups pineapple chucks
  • 1 – 2 tbsp juice from the pineapple or water

Instructions

  1. Place the pineapple chunks in a freezer-safe container and freeze for 3 – 4 hours so it's not frozen solid, but very icy

  2. If pineapple is frozen solid, remove from freeze and allow to thaw for 15 – 20 minutes

  3. Add pineapple chunks and juice (or water) to blender

  4. Blend until chunks are completely blended and pineapple is a thick slush

  5. Serve immediately
