SCD Recipe: Lemon Mousse

This is one of my favorite new Specific Carbohydrate Diet recipes. Lemon mousse is very easy to make, but you will  need to have some yogurt made with heavy cream. If you haven’t made yogurt with heavy cream before you make it the same way as regular SCD yogurt – be sure to check your heavy cream to see if guar gum has been added.


Since good heavy cream is expensive I usually just make half the amount of yogurt as I normall do. You can use it for a lot of great dessert recipes, “ice-cream,” or as a dessert topping. Just beat at high speed until it whips up like whipped cream. It will be a little thicker than regular whipped cream. In my edition (1999) of Breaking the Vicious Cycle the recipe for making yogurt with heavy cream is on pg 134 under “French Cream.”

You’ll also need to make some Lemon Curd ahead of time so it’s chilled.

SCD Lemon Mousse

Ingredients

  • 1 cup SCD yogurt made with heavy cream
  • 1 cup chilled lemon curd

Instructions

  1. Spoon a little of the chilled lemon curd into the bottom of four ramekins

  2. Whip yogurt with an electric beater, or stand mixer, at high speed until fluffy - 4 - 5 minutes

  3. Reserve four spoonfuls of the whipped yogurt and set aside for topping

  4. Add the chilled lemon curd to the whipped yogurt

  5. Beat on high speed for 2 - 3 more minutes to combine the lemon curd and whipped yogurt

  6. Spoon into the ramekins

  7. Top with the reserved whipped yogurt (note: I leave this tart because the lemon curd is sweet, but you could add some honey to it if you don't like the tart flavor)

  8. Serve right away or chill in the refrigerator
