Bananas, peanut butter, and yogurt have been my go-to snack combo since I started the Specific Carbohydrate Diet.
These pops are one of my favorite summer-time snacks. The peanut butter layer has a fudgesicle-like texture. I won’t blame you if you want to make the entire popsicle the peanut butter layer!
With this I threw everything into a blender – we’re not bakind so you’re measurements don’t have to be exact. The important part is to make sure the peanut butter layer is very thick – so you won’t want to use much more than a 1/2 cup of the banana and yogurt blend to mix with the peanut butter.
My popsicle holders are pretty small. They only hold about a half cup. The amount of pops you can make will vary depending on how much liquid you can fit in your holder.
SCD Layered Banana Peanut Butter Pops
- 1 cup SCD yogurt
- 2 medium ripe bananas
- 1/2 tsp vanilla
- 1/2 tsp lemon juice
- 1 tbsp honey
- 1/2 cup peanut butter
Add all ingredients except peanut butter to blender and blend
Pour banana mixture into popsicle holder so they are about half full
Reserve a half cup (if you have too much you can use it as a smoothie - that's what I did). You only need about a half cup so the peanut butter portion is very thick and peanut buttery!
Place in the freezer for 30 minutes
Blend half cup of the banana mixture with the half cup of peanut butter. It should be very thick.
Place in refrigerator until the banana mix has been freezing for a half hour and has solidified a little bit.
Pour the peanut butter mix to fill up the rest of your popsicle holder.
Freeze for at least two hours.
