SCD Recipe: Lemon Creme Cups

Making candy for the Specific Carbohydrate Diet (SCD) is easy and only takes a few ingredients! I’ve used these basic ingredients to make different kinds of “chocolate”-like cany including nut-butter cups and nut clusters. It’s easy to modify it to create new flavors.


This time I decided to try out making lemon candies and I love them! They’re soft and creamy with just the right balance of tart and sweet.

Coconut butter is the essential ingredient for these. It provides the creamy texture you want for this type of candy. It’s more of a speciality ingredient and can be a little more expensive, but I like to use to treat myself every once in a while.

Making candy takes patience. Keep the heat as low as you can – medium-low should work for this. Too high of heat causes the ingredients to separate. The candy will come out gritty or won’t even hold together. The coconut butter wil also brown and won’t have the right texture.

You want to candy to stay smooth while cooking, which requires a lower heat and constant stirring. It’s well worth the effort if you want to satisfy  your sweet tooth!

Be sure not to eat more than a couple at a time as they’re pretty rich.

  1. Line mini-muffin pan with mini-muffin baking cups

  2. Add all ingredients to a small saucepan

  3. Heat over medium-low heat - stir constantly for 5 - 10 minutes

  4. The mixture should be smooth, thicken, and start to look shiny

  5. Remove from heat when mixture coats the back of the spoon

  6. Pour mixture into muffin pan - you can fill them all the way up

  7. Allow to cool for a few minutes and then freeze for 30 minutes

  8. Remove from freezer and remove candies from the muffin pan

  9. Store in refrigerator - they melt quickly!
