SCD Recipe: Fluffy Vanilla Waffles

I love making waffles. For me they’re one of the best Specific Carbohydrate Diet (SCD) comfort foods. They’re really easy to make and pretty much always come out right.


These waffles are so fluffy they reminded me a little bit of angel food cake. I recently purchased a Belgian waffle maker and that does make for fluffier waffles. This recipe is a variation of my original waffle recipe from a few years ago, where I used a smaller, regular waffle maker. That works fine too, but the waffles might not be as light.

I love this waffle maker because it has a cermaic non-stick surface instead of teflon. I didn’t use any oil on the grill at all and they slid right out.

 

 

 

Berries is my favorite waffle topping, but you can get creative!

SCD Fluffy Vanilla Waffles

Ingredients

Instructions

  1. Separate eggs and add egg whites to large mixing bowl. Reserve yolks for later

  2. Beat egg whites at high speed until stiff peaks form

  3. Set egg whites aside

  4. Add almond flour, salt, cinnamon, and baking soda to a large mixing bowl and mix until combined

  5. Add egg yolks, lemon juice, vanilla, honey, melted butter, and coconut milk and mix at medium speed until wet and dry ingredients are well combined

  6. Gently fold in egg whites until everything is just mixed, but batter is still fluffy

  7. Prepare waffles according to waffle-maker manufacturer instructions. The batter will be thick so  you may need to spread it out a little bit

Recipe Notes

Variation: for "chocolate" waffles substitute melted cocoa butter for the regular butter.
