SCD Recipe: Cheese and Garlic Biscuits

I like trying to make different biscuit recipes. This one is one of my favorites, it has the most biscuit-like texture that I’ve made so far.

These go great with soup or chili!

SCD Cheese and Garlic Biscuits

These have a garlic bread flavor with an old-fashioned drop biscuit texture.
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes
Servings 6 biscuits

Ingredients

  • 1 3/4 cups almond flour
  • 2 1/2 tbsp coconut flour
  • 1 large egg
  • 1 tbsp honey
  • 2 tbsp coconut milk or plain yogurt
  • 1 tsp apple cider vinegar
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 2 1/2 tbsp butter or ghee cold
  • 1/2 cup sharp cheddar cheese grated
  • 1 tsp minced garlic

Instructions

  1. Preheat oven to 350 degrees
  2. Combine all ingredients except butter in a large bowl
  3. Mix on medium speed until combined
  4. Combine in butter - if using a stand mixer the dough hook works for this, or you can use a pastry cutter to do it by hand. There should be visible pieces of the butter showing
  5. Line a baking sheet with parchment paper
  6. To make biscuits: you can flatten out the dough and use a biscuit cutter to form the biscuits. Or you can hand form the biscuits individually. You should get 6 - 8 depending on what size you make them
  7. Place the biscuits a couple inches apart on the sheet
  8. Bake for 18 to 20 minutes until biscuits are golden brown
  9. Cool on wire rack
  10. Store in air-tight container in refrigerator or freeze
  11. Reheat in toaster oven
