SCD Recipe: Banana Coconut “Porridge”

If you’ve been missing hot cereal, you might find this satisfying. I wasn’t sure if it would turn out, but it tasted it pretty good and it was nice and creamy.

Ingredients:
 
2/3 cup thick yogurt 
2 tbsp almond butter
1 tbsp honey
1/2 cup shredded or flaked coconut (make sure no sugar added)
1 tsp cinnamon
1/4 tsp vanilla
1 ripe banana
nuts (sliced almonds, walnuts, hazelnuts)


Prepartion:

  1. Stir together yogurt, almond butter, honey, coconut, cinnamon, and vanilla
  2. Slice banana into a small saucepan
  3. Turn heat on medium-low
  4. Heat banana until it is just soft
  5. Mash up banana
  6. Add yogurt mixture
  7. Stir until mixture is hot
  8. Pour into a bowl
  9. Top with nuts

***Variation – substitute SCD legal coconut or almond milk for the yogurt***
