SCD Recipe: Dairy-Free Banana Cashew Pudding

I have been wanting to try out using cashews for a pudding type recipe for a while. They work pretty well!


1 cup cashews
3 tbsp lemon juice
1/3 cup coconut oil
1/3 cup honey
1 tsp vanilla
2 very ripe small bananas or 1 medium


  1.  Soak cashews in 3 cups of water for 24 hours
  2. Combine coconut oil and honey in a small saucepan
  3. Cook over medium heat until coconut oil is completely melted – stir occasionally
  4. Add soaked coconuts, honey mixture, vanilla, lemon juice and bananas to blender
  5. Puree for 6- 7 minutes until cashews are very smooth
  6. Chill in refrigerator for a few hours before serving
  7. Slice banana into pudding right before serving
