SCD Recipe: Turkey Meatloaf Cups

1 lb. ground turkey
1 egg
1/2 cup grated Parmesan cheese
1/2 cup chopped onion
2 tsp salt
1 tsp pepper
1/2 tsp dried garlic
1 tbsp SCD legal yellow or Dijon mustard
Cheese for topping (cheddar, jack, Parmesan)

Preheat oven to 350 degrees.

Combine all ingredients except topping cheese in a large bowl. Mix well.

I used a jumbo muffin pan for these, but you could use regular size.

Fill each muffin cup to the top with the meatloaf mixture.

Top each cup with grated or sliced cheese of your choice. I used a mixture of cheddar, jack, and Parmesan)

Bake for 35 – 45 minutes until internal meat temperature is at least 165 degrees. Cooking time for smaller cups will probably be around 25 – 35 minutes.
