Coconut Bliss Ice Cream: An Occasional Treat

First off I will say Coconut Bliss Ice Cream is not SCD legal. That being said, I do eat it sometimes because I have found it to be a good addition of a non-SCD food. It is made from coconut milk and agave.

I really missed ice cream, and I felt like this would be a healthier addition than ice cream made from milk and sugar.

 

There are several flavors of Coconut Bliss. I usually stick with the Vanilla Island or the Naked Coconut, but I have tried the Mint Galactica, the new Luna Berry Swirl, Dark Chocolate, Chocolate Hazelnut Fudge, and my favorite Chocolate Peanut Butter.

It’s not quite as indulgent as it sounds. One of my favorite things about Coconut Bliss is that there is no sugar used even in the chocolate and the peanut butter. The main illegal ingredients in all of the flavors is guar gum and agave nectar. Agave is something I already ate on occasion, and now Coconut Bliss is pretty much the only time I have it. I guess having a little guar gum doesn’t bother me either.

Cocoa is something I added back into my diet a while ago. The ingredients of the Chocolate Peanut Butter ice cream are: Organic Coconut Milk (this is where the guar gum is), Organic Agave Syrup, Organic Vanilla Extract, Organic Peanut Butter (organic peanuts, organic peanut oil, salt), Organic Fair Trade Cocoa.

The Vanilla Island is just Organic Coconut Milk, Organic Agave Syrup, Organic Vanilla Extract, Organic Vanilla Beans. 

When I add new foods that are beyond SCD I try to make good choices. There was a time when I thought I would be able to just add foods that I ate before back into my diet, but now I know that is not how it is going to work for me. I realized there are a lot of healthy foods that are not a part of the diet, and for me some of those are taking priority. Granted Coconut Bliss is a dessert, but I think of it as a healthy dessert choice.

I like to have it with fruit and nuts which helps me to stick to the actual serving size of a half cup. When I do have a pint of it, I make sure I don’t eat it every day (this makes it last longer anyway!).

I just wanted to spotlight my favorite non-SCD addition to my diet!
