SCD Recipe: Breakfast Sandwiches

4 small waffles
4 slices cooked turkey bacon (nitrate free)
4 eggs
2 slices sharp cheddar cheese

Preheat toaster over or oven to 350 degrees.

Beat eggs and cook as if making a plain omelet. Slide omelet onto a plate and cut to size of waffles.

Heat waffles in toaster oven until warm.Butter.

Layer bacon, cheese and eggs onto a waffle and top with another waffle. Place sandwiches into toaster oven (or over) and cook for about five minutes until cheese is melted.

Makes two sandwiches.
