SCD Recipe: Bacon Wrapped Stuffed Dates

This is a recipe I found in the newest version of Cook This Not That. I made a few changes, although the recipe as written in the book is SCD Legal. I will be posting more about this Eat This Not That/Cook This Not That books soon.

This recipe is very simple and makes a great appetizer. 


6 Medjool Dates – pits removed
3 Slices of Bacon – I used nitrate fee turkey bacon
A few pieces of strong cheese – blue cheese, sharp cheddar. etc. – I used gouda
6 cashews or almonds- I roasted some cashews for a little extra roasting flavor, but they can be raw

Preheat oven to 425 degrees. Line a baking pan or sheet with parchment paper (I didn’t use parchment paper and my pan was very sticky, so I think parchment paper is a good idea).

Place one nut in each date. Fill the rest of the inside of the date with cheese. Cut the slices of bacon in half and wrap a half around each date. If the bacon wraps are loose, secure with a toothpick to keep the cheese from running out. Place dates, cut side up on the baking sheet.

Bake for 15-20 minutes until the bacon is crispy.

I didn’t get a very pretty picture, but they tasted good!
