It was 10 years ago today…

That I began SCD. I remember very clearly because it was the Friday before Halloween and there was candy all over the office (just like now). I did not have one single piece! Once I made up my mind to do it I was very serious about doing it right.

I remember the last dinner I had before starting included a baked potato. I knew it was the last one I would have for a long time. At the time I started I planned to do the diet for one year, and then I would start to add in old foods. I thought adding in old foods would mean everything – ice cream, pizza, grilled cheese sandwiches, or whatever. Instead it was seven years and not all those additions made it. I have had pizza, but now I’ve scaled back again. Ice cream is just not to be.

Those first weeks were difficult. It seemed like I could hardly find anything to eat. I remember bringing plain chicken breast and apples for lunch. I think I had to get up early to make eggs for breakfast because I didn’t have a yogurt maker or almond flour yet. LARA bars were not around yet either. I also remember eating green salads while everyone else was eating pizza or other things I could have. It took a while to get used to things and to get more creative in making things.

One thing I never ate before the diet was squash. I thought I didn’t like it, but once it was my only option for a potato like side dish, I learned to embrace it. I also started eating a lot more vegetables than I ever had.

So today, just like 10 years ago, there is a potluck at my work. Potlucks are not my favorite thing. I have brought SCD safe foods for potlucks in the past, but I notice a lot of times no one eats it. It’s not that what I bring is bad, but sometimes I guess it seems foreign. I don’t like bringing hot food to work, so I sometimes try to bake something. It’s just usually not that popular. Another thing is that making SCD safe foods is time consuming and sometimes expensive. I don’t always think it’s worth bringing to a potluck. Usually I just sit the potlucks out. I have brought a fruit tray, but those are expensive too.
